Stuff the inside of the pork loin with sage, chopped parsley, freshly grated lemon zest, and the juice of one lemon.
Add thinly sliced garlic to the stuffing mixture.
Season the inside of the pork loin generously with salt and black pepper.
Roll the pork loin back into shape, being careful not to let the stuffing spill out.
Tie the pork loin with butcher's twine to secure it.
Score the skin of the pork loin with a sharp knife to help it form crispy crackling.
Season the outside of the pork loin generously with salt and black pepper.
Wipe off excess moisture from the skin with a paper towel to ensure crispy crackling.
Place the pork loin on a tray lined with baking paper and put it into a preheated oven at 250°C for about 45 minutes to 1 hour, depending on the size of the pork.
While the pork is cooking, peel and grate Granny Smith apples.
Heat a pan over medium heat and add a drizzle of olive oil, 2 sticks of cinnamon, and 1 star anise.
Add the grated apples to the pan and cook for about 2 minutes.
Add grated lemon zest and the juice of 1 lemon to the apples and cook for another 2 minutes.
Add a small pinch of salt and black pepper to balance the acidity.
Add 2-3 tablespoons of brown sugar to the apples, adjusting based on the acidity of the apples and lemons used.
Cook the apples until they reach a puree consistency, adding a little water if necessary.
Transfer the apple mixture to a bowl and let it cool completely until ready to serve.
Once the pork is done, let it rest for 15 minutes to retain moisture and allow internal temperature to rise.
Serve the pork loin with a ramekin of apple sauce on the side.
