- 6Remove chicken from the pot and let cool slightly.
- 7Strain the broth to remove vegetables and herbs, returning the liquid to the pot.
- 8Shred the chicken meat, discarding the skin and bones, and add it back to the broth.
- 9Stir in rice and prunes, and simmer for an additional 20-30 minutes until rice is tender.
- 10Adjust seasoning if necessary, adding more salt and pepper to taste.
- 11Serve hot, garnished with fresh parsley.
