Chicken is leaner, while pork is often less expensive.
Heat a heavy-based pot over low to medium heat and add olive oil.
Add carrots and onions to the pot, along with fresh thyme, and sweat the onions down until soft.
Season chuck steak well with salt and black pepper.
Heat grape seed oil in the pan until piping hot, then add the chuck steak and sear for 1 minute on each side to create a crust.
Transfer the seared steak to the pot with the onions and carrots.
Pour local beer into the pan over low to medium heat and reduce it by about half to intensify the flavor.
Add beef stock and corn flour mixed with water to the pot.
Cook in the oven at 150°C (approximately 302°F) for 2 hours.
Transfer the mixture to a pie dish and allow it to cool completely to room temperature.
Cover the cooled mixture with store-bought short crust pastry.
Brush the top of the pastry with an egg wash made of egg yolk and a little milk.
Bake in the oven at 200°C (approximately 392°F) for 30 minutes until golden brown.
