Heat a large non-stick skillet over medium-high heat.
Add 0.5 pound of breakfast sausage to the skillet and break it up with a wooden spoon until browned and cooked through.
Remove the sausage from the skillet and place it on a plate lined with paper towels, leaving drippings in the pan.
Add 2 cups of frozen hash browns to the skillet with the drippings and cook over medium-high heat for about 2 minutes without stirring until golden brown.
Flip the hash browns and cook until evenly browned, stirring occasionally.
Remove the hash browns to a plate and add 1 tablespoon of butter to the skillet.
In a large bowl, crack 6 eggs and season with 1/4 teaspoon salt and 1/4 teaspoon cracked black pepper. Optionally add 1 tablespoon of milk or cream.
Mix the eggs and return the skillet to medium heat, adding the eggs once the butter is melted.
Scramble the eggs until cooked, then remove from heat and set aside.
Wrap 4 large flour tortillas in damp paper towels and microwave for 30 seconds to soften them.
Place the tortillas side by side for assembly. Divide the sausage, hash browns, scrambled eggs, and 1 to 1.5 cups of shredded cheese among the tortillas.
Add 2 tablespoons of chopped cilantro and slices of 1 avocado to the filling.
Fold the tortillas over the filling, tucking in the sides and rolling tightly to form burritos.
Wipe down the skillet and heat over medium heat.
Place the burritos seam-side down in the skillet and cook for about 2 minutes until golden brown, then flip and cook the other side for another 2 minutes.
Serve with sour cream and salsa.
