1/2 cup tomato sauce (125 grams)

5 cups fish broth (1200 ml)

2 cod fillets (8 oz each, 225 g)
1/2 lb raw medium-sized shrimp (225 grams)
1 cup Spanish fideos (115 grams)

Heat a stock pot over medium heat and add 2 tbsp of extra virgin olive oil.

Finely chop 1 small onion, roughly chop 5 cloves of garlic, and cut 2 peeled carrots into small bite-sized pieces.

Add the chopped vegetables to the stock pot and mix continuously with the olive oil for 3 to 4 minutes until the onions are translucent.

Add 1/2 tsp of sweet smoked Spanish paprika and 1/2 tsp of dried thyme to the vegetables and mix well.

Add 1/2 cup of tomato sauce and season with sea salt and black pepper; mix until well combined and simmer for a couple of minutes without stirring.

After 3 to 4 minutes, add 5 cups of fish broth and 1/4 tsp of saffron threads; turn up the heat to high and mix gently.

Pat 2 cod fillets (8 oz each) dry with paper towels, season with sea salt and black pepper, and cut into small bite-sized pieces.

Pat 1/2 lb of raw medium-sized shrimp dry with paper towels, season with sea salt and black pepper, and set aside.

Once the broth comes to a boil, add 1 cup of Spanish fideos and stir every 1 to 2 minutes to prevent sticking.

After cooking the pasta for about 5 minutes, add the pieces of cod and shrimp, mixing everything together.

Place a lid on the stock pot, lower the heat to low medium, and simmer for 2 to 4 minutes until the pasta is al dente and the seafood is cooked through.

Remove the stock pot from heat, transfer some soup into a shallow bowl, and garnish with fresh parsley.
