Transfer the fish pieces to the first bowl and mix with your hands to ensure the fish is thoroughly coated with the marinade. Set aside to marinate for at least 30 minutes or up to three hours.

In the second bowl, add sweet potatoes (or Irish potatoes), bell peppers, carrots, and ripe plantains, then mix to coat everything with the marinade.
