Avocado Toast with Egg

1 ripe avocado
1 large egg
1/2 tsp salt
1/4 tsp black pepper
1 tsp olive oil
1/2 tsp red pepper flakes (optional)
1 tbsp lemon juice

Toast the slices of whole grain bread until golden brown.

While the bread is toasting, bring a small pot of water to a gentle simmer.

Crack the egg into a small bowl and gently slide it into the simmering water to poach. Cook for about 3-4 minutes until the white is set but the yolk is still runny.

In a bowl, mash the ripe avocado with a fork. Add lemon juice, salt, and black pepper to taste.
