Whole grain buns offer more fiber and nutrients.
Cut two 1 cm (0.4") thick slices of tomato.
Lightly rinse the thinly sliced red onion to soften the pungency.
Remove and strain the onion with a mesh strainer.
Place the onion onto a paper towel and remove the excess water.
Chop one pickle into fine pieces.
Chop the onion into fine pieces so that it will blend well with the ground meat in the patties.
Add milk to the panko and stir to moisten.
Add 1/3 teaspoonful of salt and pepper to the ground beef and combine them by squeezing the mixture.
Add the moistened panko and finely chopped onion to the beef and mix thoroughly.
Divide the mixture into two equal portions and roll each portion into a ball.
Shape the meat mixture into patties about 10 cm (3.9") in diameter and place each patty onto a sheet of plastic wrap.
Heat a frying pan and add a small amount of vegetable oil, coating the pan thinly.
Place the meat patties onto the pan and lightly press them to attach firmly.
Cook on medium heat for about 2 minutes, occasionally rotating the pan to brown the patties evenly.
Lift the patty to check for browning, then gently flip it over and continue cooking for about 30 seconds.
Add 1 tablespoonful of water, cover immediately, and cook on low heat for 3 more minutes.
Check if the patty is cooked by pressing the surface; if it has a firm resistance, it is ready.
Turn off the burner and place the patties onto a plate.
If there is too much oil in the pan, wipe it off.
Combine ketchup, tonkatsu sauce, and water in the pan and turn on the burner to mix.
Add butter to the sauce and melt it, then turn off the heat.
Coat the patties with the sauce in the pan.
Cut the buns in half horizontally and toast them in the oven until lightly toasted.
Spread butter on each cut side of the buns to prevent moisture absorption from the vegetables and sauce.
Spread whole grain mustard on the bottom half of the buns.
Arrange the loose-leaf lettuce on the bun, showing the frills nicely.
Place the chopped pickle on top of the lettuce, followed by the red onion and the slice of tomato.
Add the beef patty coated with the sauce and cover it with a slice of cheddar cheese.
Complete the burger with the top half of the bun and skewer it with a bamboo stick to keep it together.
