Slice the two rib eye steaks into small strips.

Marinate the beef with 1/3 cup low sodium soy sauce, 1 teaspoon ground ginger, 1 tablespoon rice wine vinegar, 1 teaspoon black pepper, 1 tablespoon duck fat, and 1 to 2 tablespoons honey. Add 1 tablespoon baking powder and mix well.

Set the marinated beef aside.

In a separate bowl, mix 1/2 cup low sodium soy sauce, 1 heaping tablespoon brown sugar, 1 tablespoon oyster sauce, 3 tablespoons water, 1/2 teaspoon crushed red pepper, and 1 teaspoon cornstarch. Set the sauce aside.

Heat vegetable oil in a wok over medium heat.
