Chop 1 and 1/2 red bell peppers into 1-inch chunks and set aside.

In a large bowl, combine the sliced steak, minced garlic, chopped ginger, 1 tablespoon of golden brown sugar, and 1/2 cup of soy sauce. Mix thoroughly and refrigerate for at least 2 hours.

For the sauce, press 2 garlic cloves and grate 1/2 teaspoon of ginger. Combine in a bowl with 2 tablespoons of golden brown sugar, 1/2 cup of soy sauce, and 1 cup of beef broth.

Dissolve 2 tablespoons of cornstarch in 2 tablespoons of beef broth to create a slurry, then add to the sauce mixture and set aside.

Heat 2 tablespoons of avocado oil in a large wok over high heat. Add the marinated beef in batches, allowing it to sear for 1 to 2 minutes before stirring. Remove each batch and set aside.

Add 1 tablespoon of avocado oil to the wok, then add the chopped onion and stir for 1 minute. Add the red and green bell peppers and stir constantly for a few minutes until crisp.
