How to Make Baklava (Pistachio and Walnut)

Baklava, a beloved dessert across the Middle East and the Caucasus, is thought to have originated in the Ottoman Empire. In Azerbaijan, it holds a special place during festive occasions, symbolizing hospitality and celebration. Each region boasts its unique twist, with variations in nuts and spices, making baklava a cherished treat worldwide, enjoyed by many during holidays and gatherings.

Instructions
- 1Preheat the oven to 350°F (175°C).
- 2Grease a baking dish with melted butter.
- 3Layer sheets of phyllo dough in the dish, brushing each layer with butter.
- 4Chop walnuts finely and mix with sugar, cinnamon, and a pinch of clove.
- 5Spread a layer of the walnut mixture over the phyllo.
- 6Continue layering phyllo and walnut mixture until all ingredients are used, finishing with phyllo on top.
- 7Cut the baklava into diamond shapes with a sharp knife.
- 8Bake in the preheated oven for 30-40 minutes until golden brown.
- 9While baklava is baking, combine water, sugar, honey, lemon juice, and vanilla in a saucepan.
- 10Simmer the syrup for about 10 minutes until slightly thickened.
- 11Remove baklava from the oven and immediately pour the hot syrup over it.
- 12Allow baklava to cool completely before serving.

Instructions
- 1Preheat the oven to 350°F (175°C).
- 2In a bowl, mix the chopped pistachios, walnuts, 1/2 cup sugar, and ground cinnamon until well combined.
- 3Unroll the phyllo dough and cover it with a damp cloth to prevent it from drying out.
- 4Brush a 9x13 inch baking dish with melted butter. Place one sheet of phyllo dough in the dish and brush it with butter. Repeat this process, layering 8 sheets of phyllo, brushing each with butter.
- 5Spread a thin layer of the nut mixture over the phyllo dough.
- 6Layer 4 more sheets of phyllo, brushing each with butter, then add another layer of the nut mixture. Repeat this process until all the nut mixture is used, finishing with 8 layers of phyllo on top, brushing each with butter.
- 7Using a sharp knife, cut the baklava into diamond or square shapes.
- 8Bake in the preheated oven for about 45-50 minutes, or until golden brown.
- 9While the baklava is baking, prepare the syrup by combining water, honey, 1/2 cup sugar, and vanilla extract in a saucepan. Bring to a boil, then reduce heat and simmer for about 10 minutes.
- 10Once the baklava is done baking, remove it from the oven and immediately pour the hot syrup over it. Allow it to cool completely before serving.
