Prep strawberries by rinsing and slicing them.
In a bowl, combine 2 cups of sliced strawberries with 1/2 tablespoon cornstarch and 1/2 tablespoon white sugar, stir until well combined.
In a large bowl, cream 1 (8 oz) block of full fat cream cheese until fluffy using an electric hand mixer.
Add 3 tablespoons of white sugar to the cream cheese and mix until incorporated.
Add 1 teaspoon of pure vanilla extract and 1 teaspoon of pure strawberry extract to the cream cheese mixture and blend well.
Thaw and unfold the puff pastry, then roll it slightly larger.
Score the puff pastry panels and cut them into squares.
Place the squares onto a 9 by 13 inch baking pan lined with parchment paper.
Fold in the corners of the puff pastry squares, leaving space in the center.
Scoop about 1 tablespoon of cream cheese filling into the center of each puff pastry square.
Top the cream cheese filling with 2 or 3 sliced strawberries.
Brush the edges of the puff pastry with an egg wash made from 1 large egg and 2 teaspoons of water.
Preheat the oven to 400°F and bake the danishes for about 20 minutes.
Make a lemon glaze by whisking together 1/2 cup powdered sugar, zest of 1/2 lemon, and 3 teaspoons of lemon juice.
Drizzle the lemon glaze over the warm danishes.
