Wash and peel 2 pounds of potatoes, then dice them into even cubes of about 1/2 inch in thickness.
Peel and dice 1 medium to large onion, cutting it in half through the root, slicing towards the root, rotating, and finishing cutting through the rest of the onion.
Mince 2 cloves of garlic.
Shred 0.5 cups of cheddar cheese.
Turn the stove onto medium high heat and fry 2 slices of bacon to desired crispiness, discarding excess grease.
Add 0.5 pounds of lean ground beef to the pan, breaking it up with a spatula while cooking, and season with salt, black pepper, garlic powder, sugar, dehydrated onion, paprika, ground cumin, and chili powder.
Once the beef is fully cooked, drain excess fat if desired, and add vegetable oil to the pan if needed.
Pour the diced potatoes into the pan, toss to coat in oil, and flatten into a single layer. Cover with a lid and set a timer for 10 minutes to steam and partially cook the potatoes.
After 10 minutes, remove the lid and check the potatoes. If they are light in color, crank the heat back up to medium high, season with salt, black pepper, and paprika, and let fry for 5 minutes without disturbing.
Check for browning on the potatoes, toss them, and flatten into a single layer again, trying to get unbrowned sides facing down.
Add the diced onions on top of the potatoes and let rest for 5 minutes before tossing to mix with the potatoes.
Repeat the flattening, browning, and tossing step several times until desired crispiness is achieved.
Make a hole in the center of the mixture, add minced garlic and some oil, and let fry until the garlic is light golden brown before tossing everything together.
Return the cooked ground beef to the pan and mix well.
Sprinkle the shredded cheese and cooked bacon over the top, cover with a lid for several minutes to heat through, then remove the lid when the cheese has melted.
