1

Wash and hull 600 g of strawberries, removing the green tops.

2

In a pan, add 100 g of white sugar and heat to make caramel.

3

Cut strawberries in half and add to the caramel in the pan.

4

Stew the strawberries in the caramel on high heat for about 5 minutes.

5

Turn off the heat and strain the mixture through a coarse sieve to make a strawberry sauce.

6

Optionally, add 1 teaspoon of balsamic vinegar to the strawberries while simmering for added flavor.

7

In a bowl, add 600 g of double cream and 1 teaspoon of vanilla paste, then whisk until soft peaks form.

8

Fold in 1 tin of condensed milk into the whipped cream mixture.

9

Crush 50 g of meringues and fold them into the mixture.

10

Transfer the mixture into a serving dish, adding some of the strawberry sauce and creating ripples without fully mixing it.

11

Top with remaining strawberry sauce and freeze for about 4 hours until firm.

12

To serve, let the ice cream sit in the fridge for 30 minutes to an hour for easier scooping.

13

Use a spoon or ice cream scoop dipped in boiling water to serve the ice cream.
