🥗Healthier: honey

💰Cheaper: brown sugar

Honey is a natural sweetener with a different flavor profile.

1

Heat 2 cups of whole milk, 3 cups of heavy cream, 1/2 cup of sugar, and a pinch of salt in a saucepan over medium-low heat, stirring until the sugar dissolves and the mixture is scalded.

2

In a separate bowl, whisk together 10 egg yolks and 1/2 cup of sugar until it reaches the ribbon stage.

3

Ladle some of the hot milk mixture into the egg mixture while whisking constantly to temper the eggs, then pour the egg mixture back into the saucepan while whisking.

4

Cook the mixture until it thickens enough to coat the back of a spoon, then remove from heat.

5

Set up an ice bath with a large bowl filled with ice and a smaller bowl inside it. Ladle half of the ice cream base into the smaller bowl and let it cool.

6

For mint chocolate chip ice cream, add a handful of fresh mint to the hot mixture and let it steep while cooling.

7

Cover the bowls with plastic wrap, ensuring the wrap touches the surface to prevent a skin from forming.

8

Pour the cooled base into an ice cream maker and churn according to the manufacturer's instructions, checking after 30 minutes.

9

Once the vanilla ice cream is ready, stir in crushed Oreos for cookies and cream flavor, or pour melted chocolate into the mint ice cream while churning for mint chocolate chip.

10

Transfer the ice cream to a loaf pan and cover with parchment paper or plastic wrap before freezing for at least 8 hours before serving.
