1

Start by making pico de gallo: dice 3 tomatoes, 1 red onion, and 1 jalapeno. Chop 10 g of cilantro and squeeze in the juice of 1 lime. Season with salt and black pepper, then mix everything together and store in a container.

2

Slice 900 g of potatoes into strips and dice into bite-sized pieces. Season with 1.5 tsps each of onion powder, garlic powder, smoked paprika, dried oregano, ground cumin, salt, and black pepper. Mix to coat the potatoes.

3

Cook the potatoes in an air fryer at 190° C (375° F) for 22 to 25 minutes until golden brown and crispy.

4

Prepare the beef by weighing out 1 kg of 95% lean beef. Season with salt and black pepper and cook in a high-heat pan with a light spray of avocado oil for about 8 minutes, breaking it up as it cooks.

5

Add in the previously prepared spice mix (2 tsps each of onion powder, garlic powder, smoked paprika, dried oregano, and 1 tsp of ground cumin) and 100 ml of chipotle sauce. Cook for an additional minute to combine flavors.

6

Portion the cooked beef and potatoes into meal prep containers. Serve with pico de gallo on the side and drizzle with Sriracha mayo if desired.
