Spread the stuffing mixture onto the pork tenderloin, leaving some room at the edges.
Roll the pork tenderloin over the stuffing and secure it with kitchen twine.
Season the outside of the pork with a pork rub and additional salt and pepper.
Heat olive oil in a skillet until hot, then sear the pork on all sides until golden-brown.
Transfer the pork to a preheated oven at 400°F and roast for 20-25 minutes until the internal temperature reaches 145°F.
Let the pork rest before slicing and serving.
