Welcome to my kitchen. Today I will share a recipe for a three-layer mascarpone cake.

For the dough, combine 3 cups of all-purpose flour, 1 stick of butter, 2 egg yolks, 1 whole egg, 3 tablespoons of honey, 1 tablespoon of water, 3/4 cup of sugar, 1 teaspoon of baking soda, and a pinch of salt.

Mix all the ingredients together until well incorporated and the dough is soft and slightly sticky but not leaving marks on your hands.

Divide the dough into three equal parts, approximately 276 g each.

Roll each piece of dough into a thin rectangle shape on baking paper to make transferring easier.

Bake the three layers for about 14-16 minutes, checking halfway and switching the trays if necessary for even baking.

Once baked, let the layers cool before preparing the mascarpone cream.

For the cream, mix 250 g of mascarpone cheese, 250 ml of heavy whipping cream, 1 cup of powdered sugar, vanilla extract, and a little vanilla sugar until thickened, about 1.5 minutes.

Optionally, spread a layer of coffee liqueur on one of the layers for added flavor.

Layer the three pieces of dough with the mascarpone cream in between each layer.

Melt almond bark until smooth, then pour it over the top layer of the cake.
