Soften 1 cup of unsalted butter.
Add 8 ounces of softened mascarpone cheese to the butter.
Mix in 1 teaspoon of vanilla extract and 1 cup of white granulated sugar using a hand mixer.
Add 1 cup of milk and mix until combined.
In a separate bowl, whip 6 large egg whites on high speed until stiff peaks form.
Gently fold the whipped egg whites into the cake batter.
In another bowl, combine 2 cups of all-purpose flour, 4 teaspoons of baking powder, and 1/4 teaspoon of salt. Mix well.
Sift the dry ingredients into the batter and gently fold them in.
Add the zest of 2 large lemons to the batter.
Prepare 1/2 cup of fresh blueberries and 1/2 cup of diced fresh strawberries, toss them in 1 tablespoon of cornstarch, and fold them into the batter.
Preheat the oven to 350 degrees Fahrenheit.
Line three 8-inch cake rounds with parchment paper and grease the sides.
Divide the batter evenly between the three pans.
Bake the layers for about 28 to 30 minutes, checking for doneness with a toothpick.
Once baked, let the cake layers cool.
For the mascarpone cream, place 24 ounces of mascarpone cheese in a mixing bowl.
Add 1 teaspoon of vanilla extract and whisk for about a minute until light and fluffy.
Gradually add in 3 cups of confectioner's sugar and 1 cup of chilled heavy cream.
Whisk on high speed for a couple of minutes until the frosting is light and fluffy.
Add the zest from 1 lemon to the frosting and mix well.
Once the cake layers are cooled, assemble the cake by adding a generous amount of mascarpone cream onto each layer and spreading it evenly.
Top each layer with some fruit and repeat the process for the remaining layers.
Frost the top and sides of the cake lightly and garnish with remaining fruit.
