Roti, a staple of Indian cuisine, has its roots in the agricultural practices of ancient India. Traditionally made from whole wheat flour, it symbolizes sustenance and is often served with various curries and vegetables. Roti is a daily food in many Indian households, reflecting the country's diverse culinary landscape. Today, it has found its way into global cuisine, with variations like whole wheat and gluten-free options gaining popularity.

Spelt flour adds nutritional value while all-purpose flour is more accessible.

In a mixing bowl, combine whole wheat flour, carom seeds, salt, and warm water until a soft, smooth dough forms.
Transfer the dough to an airtight container and refrigerate overnight.
Lightly dust your work surface and divide the dough into eight equal balls, rolling each between your palms until smooth.
Coat one dough ball lightly in flour on all sides to prevent sticking. Avoid excess flour that can dry out the roti.
Roll the dough evenly into a 6-inch circle, adding a light dusting of flour on both sides as needed to maintain smoothness.
Preheat a tava or skillet until hot, then place a rolled-out roti on it. Cook for a few seconds on each side until it puffs and develops golden brown spots. Use a clean kitchen towel to gently press and rotate the roti as it cooks to encourage puffing.
Repeat with the remaining seven dough balls. Serve warm.
