Bobby Flay Makes Pimento Cheese Stuffed Burgers "Juicy Lucy"

Make pimento cheese by mixing American cheese, white cheddar cheese, diced red peppers, cayenne pepper, and mayonnaise.

Take a small amount of pimento cheese and place it in the center of a burger patty.

Enclose the pimento cheese with another burger patty to hide it inside.

Season the outside of the burger with salt and pepper.

Heat canola oil in a cast iron skillet until it's smoky.

Place the burgers in the skillet and cook until a crust forms.

Remove the top of the burger bun and toast it to create a good ratio of bun to burger.

Prepare a special sauce by mixing ketchup, mayonnaise, and smoked jalapenos.

Add pickled relish made from green chilies, pickles, and pickled onions on top of the burger.

Optionally, add slices of bacon on top of the burger before serving.
