Heat a wide heavy bottom pot over high heat.

Add 1/4 cup of safflower oil to the pot.

Add a few kernels of popcorn to the pot and cover with a lid.

Once popped, add the rest of the popcorn (1/2 cup total) in an even layer and cover with the lid.

Turn the heat off for 30 seconds to allow the kernels to come up to temperature evenly.

After 30 seconds, turn the heat back on and leave the lid slightly ajar to let steam escape.

Shake the pot every so often while the popcorn is popping for 1-2 minutes.

Once popping slows, turn off the heat and quickly shake the pot to pour the popcorn into a wide bowl to prevent steaming.

In a separate bowl, mix together 1 1/2 teaspoons brown sugar, 3/4 teaspoon kosher salt, 1 teaspoon garam masala, and 1/8 teaspoon cayenne pepper.
