Preheat the oven to 425°F.
Cut 2 apples and 2 onions into large wedges.
Measure out 1 tablespoon of Dijon mustard for later use.
Chop about 1 tablespoon of fresh thyme leaves, stripping them from the stems.
Trim the silver skin from the pork tenderloins using a sharp knife.
Rub the tenderloins all over with 1 tablespoon of olive oil and sprinkle with 1 and 1/2 teaspoons of salt.
Heat another tablespoon of olive oil in a large cast iron skillet.
Add the pork to the skillet and cook, turning occasionally, until evenly browned all over, about 12 minutes.
Transfer the browned pork to a foil-lined plate or cutting board.
Check the skillet; if it looks dry, add a little more oil.
Add the apples and onions to the skillet and cook until lightly browned around the edges.
While the apples and onions cook, brush the pork all over with the Dijon mustard.
Sprinkle the pork with 2 teaspoons of chopped thyme and some freshly ground black pepper.
Add the remaining thyme to the apples and onions in the skillet.
Nestle the pork on top of the apples and onions in the skillet.
Roast the pork in the oven for 10 to 15 minutes or until cooked through.
Transfer the pork to a plate, cover with foil, and let rest for 10 minutes.
While the pork rests, add chicken stock to the apples and onions in the skillet, scraping the pan to lift any brown bits from the bottom.
Stir in a little bit of butter into the apple and onion mixture.
Slice the pork into thick slices and serve on top of the apples and onions with pan sauce drizzled on top.
