Start with boneless chicken, cut it into pieces.

Prepare 2 diced tomatoes, about 14.5 oz each, and set aside.

Chop 2 large red onions, using one for blending and one for later.

Prepare 2 habanero peppers (green or yellow) and fresh ginger root.

In a mini blender, blend the chopped onion and ginger together without peeling the skin.

In a pot over medium heat, add vegetable oil and then add the chicken pieces.

Season the chicken with 1 teaspoon of garlic powder, 1/2 teaspoon of cayenne pepper, and salt to taste.

Mix well and allow the chicken to cook for about 10 minutes.

After 10 minutes, add the chopped onion to the pot.

Add tomato paste to the mixture and let it cook for 5 minutes.

Strain excess water from the diced tomatoes before adding them to the pot.
