Prepare a quick tzatziki by mixing 1 cup non-fat Greek yogurt, 1 clove minced garlic, salt, pepper, juice from 1 lemon, and fresh dill in a bowl. Place it in the fridge.
Chop 1 English cucumber into thin strips without salting or squeezing out the liquid.
Prepare a salad with more cucumber, 1 chopped roma tomato, chopped red onion, chopped kalamata olives, a little garlic, salt, pepper, olive oil, and fresh dill. Mix well and set aside.
In a bowl, combine 1 pound of ground beef, 1 tablespoon olive oil, chopped red onion, 1 tablespoon kosher salt, black pepper, 1 tablespoon Greek oregano, 1/2 tablespoon red pepper flakes, 1/2 tablespoon cumin, and 1/2 tablespoon soy paste. Mix with hands without overworking the meat.
Form the beef mixture into three equal-sized balls.
Heat a flat griddle or skillet over medium-high heat and add a little oil.
Place a ball of beef on the hot surface, cover it with a pita, and press down to smash it.
Cook for about 1 minute until browned, then flip and cook for another minute.
Remove the pita smash burger from the heat and let it rest briefly.
Assemble the burger by adding tzatziki, the salad mixture, and crumbled feta on top of the smashed beef. Finish with a drizzle of lemon and fresh dill.
