Set the Instant Pot to the sauté function on high.

Melt 2 tablespoons of salted butter in the pot.

Add 2 cups of tricolor pearl couscous and the chopped peppers to the pot and stir for about a minute until coated and slightly toasted.

Add 2.5 cups of chicken broth to the pot and mix everything together.

Seal the lid of the Instant Pot and set to manual high pressure for 6 minutes.

Perform a quick release once the cooking time is up and fluff the couscous with a spoon.
