Keto Smoked Ribs

Cultural Context

Originating from the Southern United States, smoked ribs are a staple in barbecue culture, often associated with gatherings and celebrations. The dish showcases the art of low and slow cooking, where the smoke infuses deep flavors into the meat. With the rise of keto diets, adaptations like these smoked ribs allow for indulgence without the carbs, making it a popular choice among health-conscious food lovers.

1

Remove the membrane from the back of the ribs using a butter knife.

2

Apply a coat of lemon infused oil on both sides of the ribs.

3

Mix together 2 tablespoons of black pepper, 2 tablespoons of kosher salt, 1 tablespoon of garlic powder, 1/2 tablespoon of onion powder, 1 teaspoon of chili powder, and 1/4 teaspoon of cayenne pepper for the rub.

4

Rub the spice mixture on both sides and edges of the ribs.

5

Set up the Weber kettle grill for indirect cooking at around 250°F.

6

Place the ribs on the indirect side of the grill and cook for about 3 hours.

7

Prepare a foil pouch with 1/4 cup of butter and 2 cloves of garlic, then place the ribs meat side down on top of the butter.

8

Add the remainder of the stick of butter on top of the ribs and wrap the foil tightly.

9

Return the wrapped ribs to the grill and cook for an additional 1.5 to 2 hours.

10

Check for tenderness; the bones should have a nice pullback.

11

Remove the ribs from the foil pouch and brush with the butter braised sauce.

12

Cook the ribs on the grill for another 15 to 20 minutes to firm them up before serving.

13

Squeeze fresh lime over the ribs and sprinkle with salt before serving.
