The day before making the bread, mix 175g Spelt with 360ml of water to create a spelt soaker.

Mix the Whole Grain Spelt Flour soaker with 200g of Whole Grain Spelt Flour and 200ml of water until smooth. Cover both soakers and leave them overnight at room temperature.

The next morning, mix all remaining ingredients in a mixing bowl and add the two soakers to it.

Knead the mixture for 10 minutes until smooth.

Cover the dough and let it rest for 1.5 hours or until doubled in size.

Knock back the dough, shape it into a ball, and place it onto a baking tray. Cover and let it rest for another 30 minutes.

Preheat the oven to 230°C (top and bottom heat) and place a Pyrex dish filled with water inside.

Score the dough as desired before placing it in the oven.

Bake for 10 minutes, then remove the Pyrex dish.

Continue baking for another 45 minutes until done.

Let the bread cool on a wire rack.
