Remove salmon fillets from the freezer and place them in the refrigerator in the morning to thaw.
Prepare the seasoning by mixing together 3/4 teaspoon Italian seasoning, 1 teaspoon ground rosemary, 3/4 teaspoon dill, 1/2 teaspoon salt, and 1/2 teaspoon black pepper.
Generously season both sides of each salmon fillet with the seasoning mixture.
In a medium to high heat pan, add 1 teaspoon of butter and 1 teaspoon of olive oil.
Wait for the butter to melt and hear a sizzle before adding the salmon fillets.
Place the salmon fillets in the pan and gently press down to ensure a good sear.
Cook the salmon for 2 to 4 minutes on one side, depending on how well done you like it.
Flip the salmon fillets after 2 to 4 minutes and add a lemon wedge on top of each fillet.
Cover the pan and reduce the heat to medium, cooking for another 4 minutes.
Remove the salmon from the pan and plate it up, optionally garnishing with another piece of lemon.
