1 lb 80/20 ground chuck
1 diced onion
1 packet taco seasoning
1 can red enchilada sauce
1 can cream of mushroom soup
1 can cream of cheddar cheese sauce
1 can green chilies
tortilla scoops
cheddar cheese
pico de gallo
jalapeno peppers

Preheat oven to 350 degrees.

Heat a skillet over medium-high heat and add a little oil.

Add 1 lb of ground beef and cook until browned.

Halfway through browning, add 1 diced onion and cook until soft.

Drain excess grease using paper towels.

Add taco seasoning, red enchilada sauce, cream of mushroom soup, cream of cheddar cheese sauce, and green chilies to the skillet and stir.

Cover and simmer on medium-low heat for 30 minutes.

In a baking dish, add tortilla scoops and top with the meat mixture, mixing well.

Top with more cheddar cheese.

Bake in the oven at 350 degrees for about 30 minutes.

Let it set for 10 minutes after baking.

Top with pico de gallo and jalapeno peppers before serving.
