Roast Pork Loin

pork loin – 4 lb /1800 g
garlic – 7 cloves
brown sugar – 2 oz /70 g
dried thyme – 1 tsp
dried oregano – 2 tsp
olive oil – 4 tbsp
ground black pepper – 1 tsp
salt – 5 tbsp
water – 4 cup /1 l
vegetable oil – 1 tbsp
parsley leaves – 1 tbsp /5 g

Into a deep bowl with the water add 4½ tbsp of salt, stir and soak the pork loin in it from 30 minutes to 4 hours. Then drain the water and dry the meat with paper towel.

In a small bowl combine the olive oil, dried thyme and oregano, brown sugar, garlic and 1 tsp of salt.

Brush a baking tray with the vegetable oil and lay out the loin, coat it evenly with the prepared sauce.

Preheat oven to 375°F /190°C and roast the meat for 40-45 minutes until meat inner temperature amounts 65-70% or a red juice secretes out of the meat.

Cover the meat with a foil and leave it to rest for 15 minutes. Sprinkle your aromatic herb-roasted pork loin with the chopped up parsley and serve to the table as a main course or appetizer.
