1 medium onion
1 medium carrot
1 stalk celery

2 cups mashed potato
2 tablespoons tomato paste
1 cup all-purpose flour
2 cups beef stock
1 cup Guinness stout
1 cup shredded Irish vintage cheddar
1/2 cup water
2 tablespoons oil
1 tablespoon Worcestershire sauce

Chop garlic finely and add to a bowl.

Chop celery into half cm pieces and add to the bowl.

Chop carrot into smaller pieces than celery and add to the bowl.

Chop onion into cubes and add to the bowl.

Get a pan on the stove and add water and oil for the boil fry method of sausages.

Bring the water to a boil and add the Irish sausages, turning them over to cook evenly.

Once the water evaporates, brown the sausages in the oil.

Remove the sausages from the pan and set aside.

In the same pan, add butter and the chopped vegetables from the bowl, stirring to fry them.

Add a pinch of salt and a tablespoon of Worcestershire sauce to the vegetables.

Stir in a heaped tablespoon of tomato paste and cook it down.

Add a heaped tablespoon of all-purpose flour and stir to cook out the rawness of the flour.

Pour in beef stock made from a cube and stir well.

Add the whole can of Guinness stout and let it cook for about 12 minutes.

Slice the sausages into chunks and return them to the pan.

Cook everything together for about another 8 minutes, stirring occasionally.

Preheat the oven to 180°C (356°F).

Transfer the filling to a suitable dish, leaving some gravy behind.

Top the filling with prepared mashed potato, smoothing it out to the sides.

Sprinkle grated Irish cheddar on top of the mashed potato.
