  • Fresh parsley, chopped (for garnish)

Instructions

  1. 1In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, black pepper, and red pepper flakes.
  2. 2Place the chicken breasts in a resealable plastic bag or shallow dish.
  3. 3Pour the marinade over the chicken, ensuring it is well coated.
  4. 4Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 8 hours for more flavor.
  5. 5Preheat the grill to medium-high heat.
  6. 6Remove the chicken from the marinade and discard the marinade.
  7. 7Grill the chicken for 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
  8. 8Remove the chicken from the grill and let it rest for 5 minutes.
  9. 9Slice the chicken and serve garnished with lemon slices and chopped parsley.

  • 1/4 tsp red pepper flakes (optional)
  • 2 cups fresh spinach

Instructions

  1. 1Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. 2In a large skillet, heat the olive oil over medium heat. Add the sliced smoked sausage and cook until browned, about 5-7 minutes.
  3. 3Add the diced onion to the skillet and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute.
  4. 4Pour in the diced tomatoes (with juices) and heavy cream. Stir to combine and bring to a simmer.
  5. 5Add the cooked penne pasta to the skillet, along with the cheddar cheese, Parmesan cheese, Italian seasoning, salt, black pepper, and red pepper flakes (if using). Stir until the cheeses are melted and everything is well combined.
  6. 6Fold in the fresh spinach and cook until wilted, about 2-3 minutes.
  7. 7Taste and adjust seasoning if necessary. Remove from heat.
  8. 8Serve hot, garnished with additional cheese if desired.
