Ingredients

  • 1 lb breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 4 cups cooked hash browns
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 2 green onions, sliced

Instructions

  1. 1In a large skillet, cook the breakfast sausage over medium heat until browned and cooked through, breaking it up into small pieces as it cooks.
  2. 2Sprinkle the flour over the cooked sausage and stir to combine, cooking for an additional 1-2 minutes to remove the raw flour taste.
  3. 3Gradually whisk in the milk, stirring constantly until the mixture thickens and bubbles, about 5-7 minutes.
  4. 4Season the gravy with salt, black pepper, and cayenne pepper to taste. Reduce heat to low to keep warm.
  5. 5In a separate pan, cook the eggs to your liking (fried, scrambled, or poached).
  6. 6To assemble the breakfast bowls, divide the cooked hash browns among four bowls.
  7. 7Spoon the sausage gravy over the hash browns, then top each bowl with a cooked egg.
  8. 8Sprinkle shredded cheddar cheese and sliced green onions on top of each bowl.
  9. 9Serve immediately and enjoy your hearty breakfast bowl!
