1 Cup Milk (at room temperature)
1 Egg (beaten)
2 Tablespoons Oil
1/2 teaspoon Vanilla Essence
1 Cup All purpose/plain flour
1 1/2 to 2 Tablespoons Sugar
1 teaspoon Baking Powder
1/4 teaspoon Baking Soda
1/4 teaspoon Salt

Mix all wet ingredients in a bowl.

In another large bowl, whisk together all dry ingredients.

Pour wet ingredients in dry ingredients and gently stir with a wooden spoon or spatula until just combined. Do not overmix the batter (few lumps are ok) or pancakes will not be fluffy.

Heat a pan on medium high heat and lightly brush with melted butter/oil.

Pour pancake mix into a sauce bottle.

Drop small coin size batter on heated pan, making sure to space them and not overcrowd as they expand a little.

Cook for 2 minutes (bubbles will appear on top). Turn and cook for 1-2 minutes and remove.

Repeat the process until all batter is finished.
