Squeeze the juice of one large lemon into a bowl.
Add 2 tablespoons of dark soy sauce to the bowl.
Add 2 tablespoons of water to the mixture.
Add 1/4 teaspoon of black pepper; adjust for heat preference.
Add 1/2 cup of ketchup to the bowl.
Add 1/4 teaspoon of garlic powder and 1/4 teaspoon of ginger powder.
Add 1 teaspoon of brown sugar (or grated jaggery) to the mixture.
Mix everything together until evenly combined and set aside.
In a separate bowl, combine ground beef, finely chopped onions, and grated fresh garlic.
Add 1/2 cup of traditional oats (or bread crumbs if available) to the beef mixture.
Season with salt and black pepper.
Make a well in the mixture and add 1 egg.
Knead the mixture until all ingredients are evenly mixed together.
Wash hands and prepare a heavy pan by lining it with foil, leaving extra foil on the edges.
Transfer the meat mixture into the lined pan and shape it into a loaf.
Drizzle most of the prepared sauce over the meatloaf, reserving some for later.
Cover the meatloaf with the foil, ensuring it is sealed well.
Place the pan on a gas stove and heat on high for 1 minute to get the pan hot.
Reduce the heat to the lowest setting, ensuring it is low enough that it could go out if blown on.
Cook the meatloaf for 40 minutes covered.
After 40 minutes, carefully turn the meatloaf over using gloves or hands.
Cook for an additional 20 minutes on this side.
Uncover the meatloaf and turn it onto one of the sides, cooking for another 10 minutes.
After 10 minutes, turn it onto the other side and cook for another 10 minutes.
Total cooking time is 1 hour and 20 minutes, checking for doneness.
Drizzle the remaining sauce over the meatloaf and cover for 10-15 minutes to allow the sauce to cook through.
Transfer the meatloaf to a plate for presentation or cut while still in the foil.
