1.5 cups full fat milk
1.5 cups thickened cream (whipping cream or heavy cream)
1 vanilla bean
0.5 cups sugar
1 tablespoon unflavored gelatin

heavy cream

🥗Healthier: Greek yogurt

💰Cheaper: milk + cornstarch

Greek yogurt reduces calories while maintaining creaminess

vanilla bean

🥗Healthier: vanilla extract

💰Cheaper: vanilla extract

Vanilla extract is easier to find and less expensive than vanilla beans.

1

Get a medium to large size saucepan.

2

Put in 1.5 cups of full fat milk.

3

Add 1.5 cups of thickened cream.

4

Scrape the seeds out of a vanilla bean and add it to the saucepan, then add the whole vanilla bean.

5

Stir the mixture with a whisk.

6

Turn the heat to medium and slowly bring the mixture to a boil.

7

Once boiling, turn off the heat and remove the saucepan from the heat.

8

Let the mixture sit for about 10 minutes.

9

After 10 minutes, remove the vanilla bean from the mixture.

10

Add 0.5 cups of sugar to the saucepan and turn the heat to low.

11

Stir until the sugar has dissolved (should take no more than 5 minutes).

12

Add 1 tablespoon of unflavored gelatin and mix until dissolved.

13

Lightly grease bowls or ramekins and pour the mixture into them.

14

Pop the bowls in the fridge and let them set for at least 4 to 6 hours.

15

Once set, run a knife around the edge of the panna cotta to release it.

16

Turn the panna cotta upside down onto a plate to serve.

17

Optionally, add a topping of your choice (e.g., chocolate, strawberry, caramel).
