Soak 1 tablespoon of gelatin in 100 ml of water for 10 minutes to bloom.

In a saucepan, add 500 ml of fresh cream, 150 ml of milk, more than half cup of sugar, and 1 vanilla bean.

Stir well and heat on medium flame until the sugar dissolves, ensuring the mixture does not boil.

Once the sugar has dissolved and the mixture is warm, turn off the flame.

Melt the bloomed gelatin in a microwave for 30 to 40 seconds or using a double boiler until fully melted.

Add the melted gelatin to the cream mixture and stir well, whisking for a few minutes to combine.

Strain the mixture and pour it into setting molds, which can be short glasses, individual bowls, or a larger bowl.

Refrigerate until set; the short glasses and bowls will set in about 2 to 3 hours, while the larger bowl will take 6 to 8 hours.

To serve, you can serve it as is or alongside berries or fruit compote.

To invert, place the molds in hot water for a few minutes to loosen the edges before inverting onto plates.
