Originating from the popularity of burrito bowls in fast-casual dining, this dish allows for all the delicious components of a burrito without the high-carb tortilla. It's become a favorite among health-conscious eaters and is easily customizable with various toppings and proteins.

Greek yogurt reduces calories while maintaining creaminess
Mince 2 cloves of garlic for the cilantro lime cauliflower rice.
Peel the garlic cloves by smashing them, then slice and mince them finely.
Chop about 1/2 cup of cilantro, adjusting to taste.
Dice 1/4 of a large red onion after removing the peel.
Prepare 4 Roma tomatoes by seeding them to avoid excess moisture, then dice them.
Cut 1 lb of flank steak into thin slices, first cutting it in half lengthwise and then against the grain.
Transfer the sliced steak to a bowl and add 1 tbsp of olive oil, 1 tbsp of taco seasoning, and 1 tbsp of fresh lime juice. Mix well and set aside to marinate.
Heat 3 tbsp of olive oil in a medium skillet and sauté the minced garlic for about 1 minute until fragrant.
Add cauliflower rice to the skillet and stir-fry for 3-5 minutes, adding the zest and juice of 1 medium lime, 1 tsp of sea salt, and 1/4 tsp of black pepper.
Remove the cauliflower rice from heat and stir in the chopped cilantro.
Heat another tbsp of oil in a larger skillet, add the marinated steak in a single layer, and cook for a couple of minutes on each side until browned.
Assemble the burrito bowl starting with about 1 cup of cauliflower rice, then add the cooked steak, diced tomatoes, and sliced avocado.
Top with diced red onion, a dollop of sour cream, and sprinkle with chopped cilantro.
