Mince 2 cloves of garlic for the cilantro lime cauliflower rice.

Peel the garlic cloves by smashing them, then slice and mince them finely.

Prepare 4 Roma tomatoes by seeding them to avoid excess moisture, then dice them.

Cut 1 lb of flank steak into thin slices, first cutting it in half lengthwise and then against the grain.

Heat another tbsp of oil in a larger skillet, add the marinated steak in a single layer, and cook for a couple of minutes on each side until browned.
