Moroccan Lamb Tagine

Heat olive oil in a pot over low to medium heat.
Add chopped onions and red peppers to the pot; sauté until softened.
Add the marinated lamb to the pot and stir.
Pour in beef stock until it just covers the lamb; bring to a simmer.
Transfer the pot to the oven and cook for about 30 minutes.
Remove the pot from the oven; add dried apricots, roasted garlic, crystallized ginger, and a drizzle of honey.
Return the pot to the oven for another 15 minutes until thickened.
