Heat a large skillet on medium-high heat and add 1 tablespoon of oil.

Place the 3-pound chuck steak in the skillet and let it brown for about 4-5 minutes on each side.

Remove the browned roast from the skillet and place it in a crock pot.

In a bowl, mix together 1/3 cup balsamic vinegar, 1/2 cup honey (sprayed with non-stick cooking spray), 1 tablespoon soy sauce, and 1/3 cup water mixed with 2 teaspoons Better Than Bouillon seasoning.

Add 4 cloves of chopped garlic and 1 teaspoon of pepper to the mixture and whisk until the honey is dissolved.

Pour the sauce over the roast in the crock pot and cover with the lid.

Cook on low for 8 hours, removing the lid at about 5 hours to add vegetables.

At 5 hours, add a half bag of frozen pearl onions, carrots, and fingerling potatoes to the crock pot and cover again.

After 8 hours, remove the meat and vegetables from the crock pot.

Turn the crock pot to high and mix 1 tablespoon of cornstarch with 2 tablespoons of cold water.

Add the cornstarch mixture to the crock pot to thicken the juices and let it thicken for 3-4 minutes.

Ladle the thickened sauce over the meat and vegetables before serving.
