Tofu Stir-Fry

Cut the firm tofu into rectangles by cutting it in half, then cutting each half into half again.

Add the tofu to a mixing bowl.

Make the marinade by pouring 80 mils of gluten-free soy sauce over the tofu.

Add 2 teaspoons of white rice flour to the marinade.

Grate 1 tablespoon of ginger and add it to the marinade.

Peel and dice 6 cloves of garlic finely, then add to the marinade.

Pour 1 tablespoon of sesame oil over the marinade mixture.

Add 60 mils of apple cider vinegar to the marinade.

Add 1 teaspoon of dried chili flakes to the marinade, or to taste.

Stir the marinade ingredients together and set aside to marinate, or refrigerate for a few hours or overnight.

Snip the pokey tips off the sugar snap peas using kitchen scissors.

Heat 1 tablespoon of avocado oil in a pan over medium-high heat.

Cook the sugar snap peas for about 2 minutes, testing for doneness and cooking longer if necessary until they have a slight give.

Set the cooked peas aside in a bowl or platter.

Add 1 more tablespoon of avocado oil to the pan for the tofu.

Drain excess marinade from one third of the tofu and add it to the pan, cooking for about 2 minutes or until lightly browned.

Repeat the process with the remaining tofu in stages, adjusting the heat if it gets too intense.

Reduce the heat to medium and add the marinade to the pan along with 125 mils of water, deglazing any bits stuck to the pan.

Reserve a small handful of pea shoots or micro greens to add on top of the finished dish, and add the rest to the marinade to wilt slightly.

Stir for 30 seconds to 1 minute until the sauce thickens and the ingredients blend together.

Carefully pour the sauce over the tofu and peas, mixing gently with two spoons to lift the peas to the surface.
