Set the browned sausage aside to cool.

Fold in 2 handfuls of sharp cheddar cheese, reserving another handful for topping.
Add the custard mixture to the cubed bread in the casserole tin, ensuring everything is well mixed and the bread is saturated.
Sprinkle the reserved cheddar cheese on top of the casserole.
Add a few pats of butter on top and sprinkle with black pepper.
Bake in the preheated oven for 50 to 60 minutes until golden brown and crispy.
