1 big onion
1 big tomato
finely chopped ginger
finely chopped garlic
cumin seeds
curry leaves
1 tablespoon salt

Cut the whole cauliflower into small florets.

Boil water and blanch the cauliflower florets in it for 1 minute.

Strain the water from the blanched cauliflower florets.

Switch on the Instant Pot in sauté mode and add 1 tablespoon of olive oil.

Add cumin seeds and curry leaves to the oil for tempering.

Add finely chopped onions to the pot and sauté for 2 minutes until cooked.

Add finely chopped ginger and garlic, and sauté until the raw smell goes away.

Add chopped tomatoes to the mixture.

Add 1 tablespoon of salt, 2 tablespoons of homemade chili powder, and 1 teaspoon of turmeric.

Mix the spices with the onion and tomato mixture and cook for 2-3 minutes until the spices release their aroma.

Add the blanched cauliflower florets to the pot and mix everything together.

If the mixture sticks to the bottom, add 1 tablespoon of water to deglaze.

Close the lid of the Instant Pot, cancel sauté mode, and switch to pressure cook mode on low pressure for 2 minutes.
