Smoked brisket meatloaf combines the classic comfort of meatloaf with the rich, smoky flavors of brisket, making it a favorite for both casual dinners and special occasions. Today, variations abound, with many incorporating different meats and spices, reflecting regional tastes.

Start by preparing the barbecue sauce on the stove.
Add 1/8 cup of molasses to the barbecue sauce.
Add 1/8 cup of maple syrup to the barbecue sauce.
Add 1/2 cup of applesauce to the barbecue sauce.
Bring the barbecue sauce to a boil and then let it simmer for a few minutes.
Pulse saltine crackers in a NutriBullet to make crumbs, aiming for about 1 cup.
Blend 1/2 cup of chopped onion, 3/4 cup of applesauce, and 1 egg in a blender until smooth.
Add 3 tablespoons of the barbecue sauce mixture to the blended mixture.
Combine the cracker crumbs with the blended mixture.
In a mixing bowl, combine 1 lb of ground pork and 1 lb of ground beef.
Add 2 teaspoons of salt and 1/2 teaspoon of black pepper to the meat mixture and mix well.
Divide the meat mixture into two loaves and place them in an 8x8 pan.
Spread half of the barbecue sauce on top of the loaves.
Bake at 325°F for about 1 hour and 20 minutes, or until the internal temperature reaches 160°F.
In the last 10 minutes of baking, add the remaining barbecue sauce on top of the loaves.
