Finely slice 1 onion.

Place the sliced onion in the air fryer tray without oil or seasoning.

Set the air fryer to 200°C and dehydrate the onion for 10 minutes.

In a mixing bowl, combine 250 grams of strong flour and a seasoning of salt.

Dice 125 grams of cold butter and add it to the flour.

Use fingers to rub the butter into the flour until it resembles breadcrumbs.

Add 70-75 mls of cold water to the mixture and bring the dough together.

Cut the dough into quarters and shape each into a ball.

Cut the balls into little squares and place them on oiled paper to prevent sticking.

Let the dough rest for 10 minutes in the freezer.

Chop the dehydrated onion and place it in a blender with a bit of water to make a smooth sauce.

In a bowl, combine 250 grams of pork mince, the blended pickled piccalilli, chopped onion, and apple, and a few thyme tips.

Grate 20 grams of cheese and add it to the mixture.
