Trim off the fat and silver skin from the beef short ribs and cut it up.

Place the trimmed meat on a baking sheet and put it in the freezer for about 10 minutes to make it easier to grind.

While the meat is in the freezer, prepare the spices: combine 1/4 teaspoon of fresh ground black pepper, 1/4 teaspoon of onion powder, 1/4 teaspoon of garlic powder, and 1 teaspoon of table salt in a bowl and mix together.

After 10 minutes, take the meat out of the freezer and grind it using a KitchenAid meat grinder (or a cast iron meat grinder).

Spread the ground meat out on a tray, coat it with the spice mixture, and gently form it into meatballs around 8 ounces each, shaping them into patties about 4 inches wide and 3/4 inch thick.
