1

Start by introducing the dish and the ingredients.

2

Use 700 g of duck, which is one whole duck, and mention that the skin and bones are usually cooked separately.

3

Prepare 2 onions (about 250-300 g) and 6 green chilies, and have some leftover coriander for fragrance.

4

Add the duck to the pot without pre-cooking any other ingredients.

5

Add the sliced onions, green chilies, and leftover coriander to the pot with the duck.

6

Add 1 tablespoon of garlic and 1 tablespoon of ginger to the pot.

7

Add 1.5 teaspoons of salt to draw out moisture from the duck.

8

Pour in 2 tablespoons of oil, which can be adjusted later based on the fat rendered from the duck.

9

Turn on the heat and mix the ingredients in the pot, then cover with a lid.

10

Cook for 10-20 minutes, checking occasionally to see how much fat and moisture has rendered out.

11

After 20-21 minutes, check the pot; the onions should be soft and the rawness of the ginger and garlic should be gone.

12

Reduce the heat to low and add spices: 1 teaspoon of ground turmeric, 2 teaspoons of coriander powder, 1 teaspoon of ground cumin, and Kashmiri chili powder for flavor and color.

13

Add 1 tablespoon of tomato puri and a teaspoon of kasuri methi for fragrance.

14

Let the spices cook in the duck fat for a few minutes.

15

Prepare 300 g of red potatoes by cutting them into quarters.

16

Add the potatoes to the pot after the spices have cooked for a couple of minutes.

17

Boil water in a kettle and add 3 cups of boiling water to the pot to create a sauce.

18

Cover the pot and cook on medium flame for about 20 minutes, allowing the potatoes to cook through.

19

After 20 minutes, check the dish; the total cooking time should be around 50 minutes.

20

Turn off the heat and garnish with fresh coriander before serving.
