Traditionally enjoyed as a snack or appetizer, they are a staple at gatherings and celebrations. Today, variations of empanadas can be found across Latin America and beyond, each region adding its unique twist to the filling and dough.

Ground turkey is leaner, and ground pork is often cheaper.
Dice potatoes and bring to a boil until tender; drain and set aside.
In a skillet, heat 1 tablespoon of avocado oil over medium-high heat.
Add 1 pound of ground beef to the skillet and flatten it for good surface contact.
Cook until browned, then add 1/2 diced onion, diced red bell pepper, and optional jalapeno; sauté until tender.
Add 1 tablespoon of garlic paste and 1 tablespoon of tomato paste; mix well.
Stir in 1 tablespoon of smoked paprika, 1 tablespoon of cumin, and 1 tablespoon of beef bouillon powder; mix to combine.
Add pre-cooked potatoes and mix everything together; pour in 1/2 cup of beef broth and bring to a boil.
Let the mixture reduce and adjust seasoning as needed; let cool slightly before adding cheese.
Fold in 1/2 cup of colby jack cheese until well combined.
Prepare a dipping sauce by mixing 1/2 cup mayo, 1/4 cup ketchup, 1 tablespoon sriracha, 1 tablespoon honey, and seasonings in a bowl until combined.
Take a spoonful of the beef filling and place it on empanada dough; fold over and seal with a fork.
Heat oil to 350 degrees Fahrenheit; fry empanadas for 3-5 minutes until golden brown.
Serve empanadas with dipping sauce and garnish with cilantro.
