- ●ginger
- ●green chilies
- ●oil
- ●lemon juice
Instructions
- 1Prepare mixed vegetables by washing and chopping them into bite-sized pieces.
- 2In a dry pan, toast mustard seeds and fenugreek seeds until fragrant, about 2-3 minutes.
- 3Grind the toasted seeds into a coarse powder using a mortar and pestle or spice grinder.
- 4In a mixing bowl, combine the chopped vegetables with turmeric powder, red chili powder, and salt.
- 5Add the ground spice mix to the vegetables and mix well to coat evenly.
- 6Pour in vinegar and lemon juice, then mix again thoroughly.
- 7Add sugar and mix until dissolved, adjusting sweetness to taste.
- 8In a small pan, heat oil until shimmering, then add asafoetida and cumin seeds, cooking for 30 seconds.
- 9Pour the hot oil mixture over the vegetable mix and stir well to combine.
- 10Transfer the pickle to a clean, dry jar and seal tightly.
- 11Let the pickle sit for at least 24 hours to develop flavors before serving.

- ●1/4 cup chopped nuts (cashews, almonds)
- ●1/4 cup raisins
- ●1/2 tsp salt
Instructions
- 1Heat ghee in a pan over medium heat.
- 2Add semolina and roast until it turns golden brown, stirring continuously.
- 3In a separate pot, bring water to a boil and add jaggery, stirring until dissolved.
- 4Once the semolina is roasted, slowly pour the jaggery water into the pan, stirring continuously to avoid lumps.
- 5Add cardamom powder and salt, mix well.
- 6Cover the pan and let it cook on low heat for about 5-7 minutes until the semolina absorbs the water.
- 7Stir in the chopped nuts and raisins, mixing well.
- 8Remove from heat and let it sit for a few minutes before serving.
