  • red chili powder
  • salt

  • cumin seeds
  • garlic

  • oil
  • lemon juice

Instructions

  1. 1Prepare mixed vegetables by washing and chopping them into bite-sized pieces.
  2. 2In a dry pan, toast mustard seeds and fenugreek seeds until fragrant, about 2-3 minutes.
  3. 3Grind the toasted seeds into a coarse powder using a mortar and pestle or spice grinder.
  4. 4In a mixing bowl, combine the chopped vegetables with turmeric powder, red chili powder, and salt.
  5. 5Add the ground spice mix to the vegetables and mix well to coat evenly.
  6. 6Pour in vinegar and lemon juice, then mix again thoroughly.
  7. 7Add sugar and mix until dissolved, adjusting sweetness to taste.
  8. 8In a small pan, heat oil until shimmering, then add asafoetida and cumin seeds, cooking for 30 seconds.
  9. 9Pour the hot oil mixture over the vegetable mix and stir well to combine.
  10. 10Transfer the pickle to a clean, dry jar and seal tightly.
  11. 11Let the pickle sit for at least 24 hours to develop flavors before serving.

  • 1/2 tsp salt

Instructions

  4. 4Once the semolina is roasted, slowly pour the jaggery water into the pan, stirring continuously to avoid lumps.
  5. 5Add cardamom powder and salt, mix well.
  6. 6Cover the pan and let it cook on low heat for about 5-7 minutes until the semolina absorbs the water.
  7. 7Stir in the chopped nuts and raisins, mixing well.
  8. 8Remove from heat and let it sit for a few minutes before serving.
